It is not a secret that I am a big fan of brunch dishes. Today I'm sharing with you my slightly-healthy recipe for chocolate chip banana bread muffins. Good to know, you probably already have most of the ingredients at home!
What do you need?
* 3 ripe bananas
* 100 grams of dark chocolate (75% cocoa)
* 250 grams of flour
* Teaspoon of baking powder
* 125 grams of soft butter or margarine
* 100 grams of sugar (you can also replace this with another sweetener, such as honey or stevia)
* 2 eggs
* A fig + some loose banana slices to decorate the muffins
* Pinch of salt
* Cupcake molds (I used silicone molds)
1. Turn on the oven at 180 degrees.
2. Stir the flour, baking powder and salt together in a bowl. Use another bowl to mix the sugar and softened butter or margarine until smooth.
3. Beat the eggs and then add the 3 ripe bananas to the egg mixture. Mash (with a fork)! I like to have larger pieces of banana in my muffins, but do this to your own preference.
4. Add the egg & banana mixture to the sugar & butter mix and mix well with a spatula. Then add the flour mix and mix well again!
5. I saved the best for last: chop the chocolate finely and stir it into the batter with a spatula. You can also add other ingredients if desired, such as nuts, berries or even more chocolate.
6. Fill the muffin trays with a tablespoon of batter and decorate them with a slice of fig and a slice of banana.
7. Place the muffins in the oven and bake them for about 25-30 minutes until golden brown. After 25-30 minutes, check if they are done by piercing them with a fork. Does the fork come out clean again? Then they are done and you can remove them from the oven.
Good to know: these tasty muffins fit perfectly in your Boho Tiffin! The leftovers (we do not guarantee that they will be there ;) ) can therefore easily be taken to the office on Monday for breakfast or a snack.
