The love for food has been instilled in me since childhood. I come from an Indonesian family where food, food and more food are central. I often spent time with my dear grandparents and learned the ins and outs of Indonesian cooking by tasting, smelling and helping myself. I spent whole afternoons sitting on a chair with my nose above the pans and a spoon in my hand to taste. And the smell and taste of freshly baked spekkoek has always stayed with me, love it! And I incorporated these delicious spekkoek herbs into a heavenly (if I say so myself) brunch granola.
What do you need? (this makes 2 full jars)
- 200g mixed nuts (unsalted)
- 100g pumpkin seeds
- 100g sunflower seeds
- 400g oat flakes
- 5 tbsp cinnamon
- 2 tbsp nutmeg powder
- 1 tsp clove powder
- 1 tsp cardamom powder
- 5 tbsp honey
- 3 tbsp brown stevia
- 4 tbsp sunflower oil
- 3 proteins
- baking paper
1. Preheat the oven to 180 degrees. Beat the egg whites in a bowl with a whisk until they are slightly stiff.
2. Place all ingredients in a large bowl and mix well until a sticky mixture is formed.
3. Spread the granola mixture on a baking tray lined with baking paper and make sure the mixture is evenly distributed.
4. Bake the granola for 15 minutes and then stir it once. Bake the granola for another 15 minutes and you're done!
Let it cool down thoroughly!
