For me, the month of January is all about being healthy, after all the festive dinners last December. Still, I was in the mood for pancakes, so I came up with these tasty and healthy veggie pancakes. The perfect combination to get your daily portion of vegetables and enjoy a stack of pancakes. Win-win in my eyes!
What do you need? (for 1 person)
- 1/2 ripe avocado
- 50g fresh spinach leaves
- 50g zucchini
- 4 tbsp flour (I used spelled flour)
- 1 egg
- 3 tbsp almond milk
- 1/2 bag of baking powder
- 50g dairy spread with chives
- salty
- butter
- blender
1. Finely chop the avocado, spinach leaves and zucchini and put them in a blender. Add the flour, egg, almond milk, a pinch of salt and baking powder and mix everything into a smooth batter.
2. Heat a frying pan and melt a small knob of butter. Now fry the pancakes over low heat until golden brown.
3. Serve the pancakes with a good dollop of dairy spread & possibly more toppings as desired and enjoy!
