It is of course nothing new that our Tiffins are the perfect lunch boxes for picnics! But how nice is it to go all-out with luxurious Italian snacks during your Sunday brunch? I get hungry again just thinking about it. These crostinis are also the perfect antipasti snack during an extensive Italian dinner. And with that little truffle touch you complete them. Guaranteed success!
What do you need?
- 1 rustic baguette
- 80g prosciutto
- 250g ricotta
- truffle balsamic vinegar (you can also use regular balsamic vinegar)
- 100ml olive oil
- 2 cloves of garlic
- salt pepper
1. Mix 100ml olive oil, 2 cloves of garlic (pressed) and salt and pepper to taste in a bowl (large enough to dip a slice of baguette)
2. Cut the baguette and dip the slices on both sides in the garlic oil. Heat a grill pan and fry the slices of baguette on both sides until golden brown
3. In a separate bowl, mix the ricotta with salt, pepper and a small dash of olive oil. Are all crostinis baked? Then top them generously with the ricotta mixture and finish the crostinis with a slice of prosciutto and truffle balsamic vinegar. Perfect to eat immediately while they are still lukewarm or of course to pack for a nice picnic.
