Fresh waffles, yum! This reminds me of the past, the smell of waffles on Sunday morning, which you could decorate yourself with lots of sweets, fruit, chocolate, nuts and cottage cheese. I often opted for the combination with Nutella and banana, and I have now come up with an adult variant with chocolate chips, walnuts and banana. The perfect brunch dish for this sunny Sunday!
What do you need?
- 250g self-raising flour
- 250ml buttermilk
- 100g oatmeal (take the ground version)
- 50g stevia sugar (or caster sugar)
- 50g unsalted butter
- 4 sachets of baking powder
- 2 ripe bananas
- 50g walnuts
- 100g chocolate chips
- 2 egg whites and 2 egg yolks (separated)
- 1 tsp vanilla extract
- 2 bags of vanilla sugar
- A pinch of salt
- Waffle iron
1. Mix the egg whites in a bowl with a hand mixer (or other mixer) until stiff.
2. Mash the ripe bananas with a fork and chop the walnuts into small pieces. I used a food processor for this.
3. Put the self-raising flour, buttermilk, oatmeal, stevia, baking powder, egg yolks, vanilla extract, vanilla sugar and salt in a bowl and mix with a mixer until a smooth batter. Melt the butter in the microwave for a few seconds and add it to the batter. Mix for another 1 minute!
4. Gently fold the egg white into the batter until well mixed. This keeps the mixture nice and airy. Then slowly fold the banana, walnuts and chocolate chips into the batter.
5. Turn on the waffle iron and grease it well with butter. Use a soup spoon to pour the batter into the waffle iron and bake the waffles for about 5-6 minutes until golden brown.
Warning: the waffles are best eaten IMMEDIATELY!
