If there is one thing that makes me happy during these summer days, it is a wonderfully fresh salad that is not too heavy on the stomach. Perfect for Sunday brunch, as a side salad at the BBQ or for lunch at the office. I enjoy doing all 3!

What do you need? (for 1 person)

- 300g watermelon

- 100g feta cheese (use a good and creamy variety for this)

- 4 red and 4 yellow snack tomatoes

- 15g fresh mint

- 1 tbsp black olives

- 1/4 cucumber

- 1/4 red onion

- 4 radishes

- The juice of 1/2 lemon

- Salt pepper

1. Cut the watermelon, cucumber and radishes into small cubes of 1 cm. Cut the black olives and snack tomatoes into slices and the red onion into thin rings. Put everything in a bowl.

2. Crumble the feta cheese over this. Finely chop the mint and add it to the bowl.

3. Pour the juice of half a lemon over the salad and season with salt & pepper. Mix everything together well! Easy peasy, right?
