Ingredients:

1 tbsp (coconut) oil, 200 grams cauliflower rice, 1 sweet pepper (cut into chunks), 1 eggplant (cut into cubes), 1 carrot (roughly chopped), 1 clove of garlic (finely chopped), 50 grams fresh spinach, 125 grams mushrooms (coarsely chopped), 1 tbsp nasi spices (I used https://www.greengypsyspices.com/nasi-co.html ) and 1 or 2 tsp Greensweet Brown. Add some salt and pepper to taste if necessary.

You can of course use all kinds of vegetables. Finish your nasi with, for example, homemade peanut sauce, bean sprouts or some fried onions.

Step 1

Place your wok on the stove and heat the oil. Briefly fry the garlic clove.

Step 2

Add the mushrooms, pepper, eggplant and carrot together with the nasi herbs. I still like it when the vegetables are still crunchy, but tastes differ.

Step 3

Finally, add the cauliflower rice and stir gently. Season with another 1 or 2 teaspoons of Brown, salt and pepper.

Step 4

Divide your cauliflower fried rice over two plates and use any toppings you like.
