5 scones or 10 small scones
Ingredients: 250 grams of spelled flour, 7 grams of tartar baking powder, 20 grams of coconut oil (melted), 75 ml of agave syrup, ½ teaspoon of vanilla, 50 grams of goji berries (soak for 10 minutes in warm water), 95 ml of boiling water and a pinch of salt.
Step 1
Preheat the oven to 180 degrees and line a baking tray with baking paper.
Step 2
Place the goji berries in a bowl and add boiling water. Soak for 10 minutes. Then drain the water and let the goji berries dry.
Step 3
Place the flour, tartar baking powder, vanilla and salt in a bowl and stir well.
Step 4
In a separate bowl, mix the coconut oil, boiling water, soaked goji berries and agave syrup.
Step 5
Add the wet mixture to the flour and mix or knead together.
Step 6
Make 5 or 10 equal balls and press flat on the lined baking sheet. Brush the scones with some almond milk so that you get a nice brown scone.
Step 7
Slide the baking tray into the oven and after about 15-18 minutes your scones are ready.
Step 8
Now let the scones cool for 10 minutes. Then you can cut them open and spread them with whatever you like.
E.g. peanut butter with banana or coconut whipped cream and homemade raspberry or strawberry jam. Make it something tasty.
You can also freeze the scones separately for a later time.
