Ingredients: 1 kilo tomatoes (cut into wedges), 1 teaspoon coconut oil, 1 red onion (finely chopped), 2 cloves garlic (finely chopped), 1 teaspoon harissa, 1 teaspoon turmeric, 1 teaspoon cumin, 500 ml vegetable or herb stock, 175 grams red lentils, 1 teaspoon curry powder, 1 teaspoon lemon juice and 1-2 bunch(es) of fresh coriander. Optional: 1 can of coconut milk.
Quick version: put everything in the blender. Even soup? Heat in a saucepan and serve in your Boho Tiffin bowl!
Step 1
Take a large pan and place it on the fire. Melt the coconut oil in this and briefly fry the onion and garlic.
Step 2
Now add the herbs and harissa and stir well into the onion mixture.
Step 3
Add the tomatoes and stir into the spice mixture.
Step 4
Pour the stock over the tomatoes and add the lentils to the pan. Now let this stand for about 20 minutes.
Step 5
Make the soup smooth with a hand blender (or let the blender do its work). Stir in the lemon juice and, if desired, the coconut milk.
Step 6
Finely chop the coriander and stir into the soup. You can also blend it into the soup with a hand blender. Finish with salt and pepper if necessary.
Step 7
Pour the soup into your Boho Tiffin and enjoy with a piece of sourdough bread. Would you like to take the soup with you? No problem, but cover the bowl PROPERLY with some cling film before you put the other bowl or lid on it.
