Lunch with healthy toppings? Give your lunch a tasty twist with this delicious grilled vegetable spread with creamy goat cheese and ras el hanout. Perfect for in your Boho-Tiffin and ideal to-go on a cracker. Actually, this is a bit of my 'leftovers' recipe, perfect for when you have some leftover vegetables and you don't really know what to do with them. Do you want to get a little more protein during lunch? Then first top your cracker with a few slices of chicken fillet.

This spread is also highly recommended as a dip for the (healthy) snack platter!

Ingredients (for 2 persons):
* 2 red pointed peppers
* 250g Romaatjes (cherry tomatoes on the branch)
* 150g goat cheese of your choice (or more if desired)
* 2 tbsp olive oil
* 6 whole wheat crackers (2 to 3 per person)
* 1 tsp ras el hanout
* Salt and pepper to taste

1. Preheat the oven to 200°C.
2. Halve the red pointed peppers, remove the seeds and then cut into cubes or strips. Halve the cherry tomatoes and place them together with the sliced ​​red pointed pepper on a baking sheet lined with baking paper. Cut the goat cheese into slices and divide over the vegetables.
3. Sprinkle everything with 2 tbsp olive oil and sprinkle with 1 tsp ras el hanout and salt and pepper to taste.
4. Roast the vegetables in the oven for about 20 - 25 minutes or until the peppers are soft and the tomatoes are starting to wrinkle.
5. Remove the vegetables from the oven and let them cool slightly.
6. Put everything in a bowl and mash with a fork until you have a spread with some structure. Prefer a smooth spread? Blend everything in a food processor or blender until smooth. Add some extra ras el hanout, salt and pepper to taste.

Fill 1 container of your Boho-Tiffin with the spread and 1 container with the (halved) crackers.

If you replace the crackers with gluten-free crackers, the spread is also perfect as a gluten-free bite.
