Start your day with a tropical party from your Boho-Tiffin! This healthy and easy pancake recipe is not only delicious, but also nutritious, easy to make and very filling. With juicy mango, chia seeds and some coconut flakes, you will definitely get those sunny vibes back. Whether you eat them for breakfast, brunch or a snack, these pancakes bring a sunny vibe with every bite - and that's a good thing in this cold February month!

Ingredients (for 1 person):
* 1 ripe banana
* 50g mango
* 2 tbsp flour
* 1 egg
* 1 tsp coconut flakes
* 1 tsp chia seeds
* Pinch of cinnamon
* Greek yogurt as a topping
* Butter for frying

1. Mash the banana and cut the mango into small cubes and mix in a bowl or shallow plate with the egg until a glass mixture forms.
2. Add the flour and then the coconut, chia seeds and cinnamon and stir well.
3. Heat a little butter (I always use butter, because I like it much better) in a frying pan over medium heat.
4. Spoon small mounds of batter into the pan and fry the pancakes for 2-3 minutes per side until golden brown.
5. Serve with a spoonful of Greek yoghurt, fresh mango pieces and a little bit of coconut flakes and chia seeds to finish it off.

Extra tip: for a little more protein, add a scoop of protein powder to the batter. Easy-peasy, right?!
