Are you, like me, crazy about tuna? Then these quesadillas, with my all-time favorite healthy tuna salad, are really something for you! These quesadillas are packed with proteins, fit perfectly in your Boho-Tiffin and are delicious both warm and cold. Ideal for a healthy lunch, post workout snack or as a protein-rich snack. And really super easy to make!
Ingredients (for 1 person):
- 2 whole wheat wraps
- 1 can tuna in water, drained
- 50g grated cheddar (use 30+ cheese for a healthier option)
- 50g black olives, sliced
- 1/4 apple
- 1/4 red onion
- 2 tbsp Greek yogurt
- 1 tbsp lemon juice
- 2 tbsp Remia fries sauce zero sugar
- Salt and pepper to taste
Dipping sauce:
- 2 tbsp Greek yogurt
- 1 tbsp chili sauce (I used Eagle's chili sauce)
- Prepare the filling: mix the tuna with the Greek yoghurt, fries sauce, olives, apple (in small cubes), red onion (in small cubes) and lemon juice in a bowl. Make sure the ingredients are well mixed. Then season with salt and pepper.
- Top the wraps: divide the tuna mixture evenly over one wrap. Sprinkle the grated cheddar on top and cover with the second wrap.
- Cook the quesadillas: heat a dry frying pan over medium heat or use an electric grill for this, like I do. Cook the quesadilla until golden brown and the cheese has melted (about 2-3 minutes).
- Slice and serve: cut the quesadilla into quarters and let cool for a bit if you want to take them with you in your Boho-Tiffin. They taste great both hot and cold!
- Make the dipping sauce by mixing the Greek yogurt with the chili sauce.
Tip: the tuna salad is also delicious on a corn waffle or cracker! You can also put it in your Boho-Tiffin on the table for a drink with friends;)
