Lately I’ve been going crazy about Vietnamese rolls and this is one of those recipes you can really wake me up for. Perfect as a healthy lunch, light dinner or as a colorful snack. And very easy to take with you in your Tiffin. Dip them in the peanut sauce and you’ll enjoy an extra flavor explosion!

Ingredients (for 2 persons):
  • 10 Vietnamese rice sheets
  • 200g surimi sticks
  • 1 ripe mango, sliced ​​or cubed
  • 1 carrot, cut into thin julienne strips (you can also use a bag of carrot julienne)
  • 1 cucumber, sliced
  • 100g edamame beans
  • 15g fresh coriander

For the dipping sauce:
  • 2 tbsp sweet soy sauce (Ketjap Manis)
  • 1 tbsp salty soy sauce (Ketjap Asin)
  • Juice of 1/2 lime
  • Honey
  • Peanut butter (organic)
  • Salt & pepper

  1. Cut the surimi sticks, mango, carrot and cucumber into thin strips.
  2. Fill a large, flat bowl or dish with warm water. Soak the rice paper in the water one by one for a few seconds until it becomes pliable. Then carefully place the paper on a cutting board.
  3. Fill the rice sheets with surimi, mango, carrot, edamame beans, cucumber and coriander.
  4. Fold the sides of the rice paper inwards and roll up tightly from the bottom. Repeat this folding technique with the rest of the rice paper.
  5. Place all the ingredients for the dip in a bowl and mix well. Season with extra salt, pepper and/or lime juice if necessary. Place the dip in a separate bowl or on the bottom of the Tiffin and serve the rolls on top.
