Lately I’ve been going crazy about Vietnamese rolls and this is one of those recipes you can really wake me up for. Perfect as a healthy lunch, light dinner or as a colorful snack. And very easy to take with you in your Tiffin. Dip them in the peanut sauce and you’ll enjoy an extra flavor explosion!
Ingredients (for 2 persons):
- 10 Vietnamese rice sheets
- 200g surimi sticks
- 1 ripe mango, sliced or cubed
- 1 carrot, cut into thin julienne strips (you can also use a bag of carrot julienne)
- 1 cucumber, sliced
- 100g edamame beans
- 15g fresh coriander
For the dipping sauce:
- 2 tbsp sweet soy sauce (Ketjap Manis)
- 1 tbsp salty soy sauce (Ketjap Asin)
- Juice of 1/2 lime
- Honey
- Peanut butter (organic)
- Salt & pepper
- Cut the surimi sticks, mango, carrot and cucumber into thin strips.
- Fill a large, flat bowl or dish with warm water. Soak the rice paper in the water one by one for a few seconds until it becomes pliable. Then carefully place the paper on a cutting board.
- Fill the rice sheets with surimi, mango, carrot, edamame beans, cucumber and coriander.
- Fold the sides of the rice paper inwards and roll up tightly from the bottom. Repeat this folding technique with the rest of the rice paper.
- Place all the ingredients for the dip in a bowl and mix well. Season with extra salt, pepper and/or lime juice if necessary. Place the dip in a separate bowl or on the bottom of the Tiffin and serve the rolls on top.
