Looking for a light lunch with an Italian twist that you can also easily take with you in your Boho-Tiffin? 🇮🇹 Then this tasty orzo salad is highly recommended! Perfectly filled with delicious vegetables, chicken, mozzarella and a hint of lemon. Enjoy Italian style! 🇮🇹

Ingredients (for 2 persons):
  • 150g orzo
  • 200g chicken fillet, diced
  • 250g cherry tomatoes (I used the ones on the branch)
  • 250g mozzarella mini (good quality)
  • 100g black olives slices
  • 5 sun-dried tomatoes
  • 4 tsp red pesto
  • 1 organic lemon
  • 15g fresh basil
  • 1/2 bouillon cube (chicken)
  • Olive oil
  • 2 tsp fries spices
  • 2 tsp Italian herbs
  • Salt and pepper

  1. Bring a pan of water to the boil, add the 1/2 stock cube and cook the orzo according to the package. Drain, rinse briefly with cold water and let cool completely.
  2. In a bowl, mix the chicken fillet with 1 tbsp olive oil, 2 tsp fries herbs, 2 tsp Italian herbs and salt and pepper. Mix well and fry the chicken in a pan until done.
  3. Cut the cherry tomatoes in quarters and the sun-dried tomatoes in pieces and add them together with the sliced ​​olives to another large bowl. Then add the red pesto and the basil (in pieces) and mix well.
  4. Add the cooled orzo, mozzarella and fried chicken fillet cubes to the bowl and mix well again.
  5. Season with the juice of a whole lemon, salt and pepper. Finish with some extra basil and enjoy!
