Fancy a salad that is just a little bit different? And that is easy to take with you in your Boho-Tiffin for on the go. This crunchy gnocchi salad with tuna and feta cheese is a real taste explosion and perfect for a tasty lunch on the go, or a light evening meal.
Ingredients for 2 servings
* 250g gnocchi
* 1/2 cucumber (diced)
* 125g cherry tomatoes (halved)
* 100g carrot julienne
* 1 tbsp capers
* A can of tuna (in water)
* 100g feta cheese
* 1/2 red onion (diced)
* 1 tbsp Greek yogurt
* 1 tbsp mayonnaise (I used Remia mayonnaise zero)
* 1 tbsp olive oil
* 1 tsp lemon juice
* A knob of butter
* 1 stock cube (vegetable or chicken)
* Salt and pepper
Ingredients for 2 servings
* 250g gnocchi
* 1/2 cucumber (diced)

* 1 tbsp capers
* A can of tuna (in water)
* 100g feta cheese
* 1/2 red onion (diced)
* 1 tbsp Greek yogurt
* 1 tbsp mayonnaise (I used Remia mayonnaise zero)
* 1 tbsp olive oil
* 1 tsp lemon juice
* A knob of butter
* 1 stock cube (vegetable or chicken)
* Salt and pepper
- Start by briefly (4 minutes) boiling the gnocchi. Add a stock cube to the boiling water for more flavour.
- Then fry the gnocchi in a frying pan with a knob of butter until golden brown.
- Place the cucumber, cherry tomatoes, julienne carrots and capers in a bowl. Season with salt, pepper and olive oil and mix well.
- Drain the tuna and mix the tuna in a separate bowl with the red onion, Greek yoghurt, mayonnaise and lemon juice and season with salt and pepper. Crumble the feta cheese over this again.
- Place the crispy gnocchi and the tuna salad salad in separate (Tiffin) containers and combine as soon as you eat. This ensures that the salad still has its crispy bite when you eat it.
