Cucumber salad with a Japanese twist
Cucumber salad is hip, hot & happening and you will find it in foodie land in different variations. And now that cucumber salad is going completely viral, we couldn't stay behind with a recipe for your Boho-Tiffin lunch box. And we are totally enthusiastic! Perfect for a nice light and tasty lunch at the office. Try the recipe quickly and discover why everyone is so enthusiastic about it.
Ingredients for 2 persons:
* 2 cucumbers
* 1 avocado, cubed
* 200g surimi in cubes
* 100g wakame seaweed salad
* 1 tbsp salty soy sauce recap asin
* 1 tsp lemon juice
* 1 tbsp nori wasabi furikake (available at the Asian store)
* 1 tbsp tempura crisps (available at the Asian store)
* Salt and pepper to taste
1. Start by slicing the cucumbers with a cheese slicer and place the slices in a bowl.
2. Add the remaining ingredients (except the tempura crisps) to the bowl and mix everything well.
3. Season the salad with salt, pepper and some extra furikake and finish with the tempura crisps.
