Let's get VEGAN! Anyone who knows me knows that I have a pretty Burgundian lifestyle. Yet I try to eat vegetarian and/or vegan more and more often, because this is simply much healthier. And now I have recently become a real fan of this plant-based coconut bowl that is also perfect to take to the office/school in your Tiffin.

What do you need?
- 150 grams of plant-based coconut curd (I used Coco Start Natural from Abbot Kinney's)
- 2 tsp coconut grater
- 25g grapes
- 25g banana
- honey
- lemon juice
- a pinch of cinnamon
- granola (I used the rescued granola from Krusli, highly recommended!)
- add more nuts or fruit if desired,

Coconut curd is also very tasty with passion fruit, for example

1. In a bowl, mix the vegetable coconut curd with 1 tablespoon of honey, a pinch of cinnamon, a small dash of lemon juice and the coconut grater. Then add the coconut mixture to your Tiffin.
2. Cut the grapes and banana into slices and start decorating your coconut bowl.

Don't forget to finish your coconut bowl
with a tasty (and not too sweet) granola.
