Hi! I'm Nadia: Mom, happily married, teacher, crazy about sports... and peanut butter.
I am the mother of 2 energetic kids and married to a “yu di Korsou”. I work almost full-time at a Montessori school as a group 1/2 teacher. In addition, I can be found (almost) every day in “the box” for a Crossfit WOD, gymnastics, weightlifting or strength training. Fortunately, I share this hobby with my husband, so we still see each other every now and then. ;-) We are real Burgundians; Together with friends, family and our kids we enjoy a nice meal and drinks together. I love being in the kitchen and preparing all kinds of tasty treats. The dishes served here at home vary from traditional Antillean stoba to Greek moussaka and Zeeland mussels. So nice “multiculti”!
Where my Instagram started more than five years ago with a kind of cookbook for myself of dishes that were "worth repeating", I now find it great to inspire others and let them experience that healthy food does not have to be boring and/or tasteless. ! (And - last but not least - that it is okay to “sin” every now and then!)
below my recipe:
Quiche (8 small or 4 large portions)
Necessary:
- 500 grams of low-fat cottage cheese
- 4 eggs
- 100g soft goat cheese (@bettinegeitenkaas)
- 2 bags of Indian stir-fry mix (@albertheijn)
- 20g cashew nuts
- 1 heaping tablespoon of massala (Hindu curry powder)
- salty
- chili pepper
Preheat the oven to 175 degrees. Line the bottom of a springform pan with baking paper. Mix the eggs with the cottage cheese and some salt and chili pepper (amount to taste). Fry the vegetable mix in a hot pan. Fry the masala briefly.
Pour the vegetables into the tin. Pour the egg/curd mixture over it. Sprinkle with the goat cheese, finely chopped cashew nuts and some chili pepper. Place in the oven for (approximately) 50 minutes, until the quiche is set and done.
